Why Use Raw Honey Instead of Sugar?
Unlike refined sugar, raw honey brings depth of flavor, natural antioxidants, and a silky texture that pairs well with dark chocolate. Plus, it keeps the truffles from being overly sweet, allowing the cacao’s bold, slightly bitter taste to shine.
Raw Honey & Dark Chocolate Truffles Recipe
Ingredients:
- 1 cup dark chocolate (70% cacao or higher), finely chopped
- ¼ cup heavy cream
- 2 tbsp Champlain Valley Raw Honey
- 1 tsp vanilla extract
- ¼ tsp sea salt
- ½ cup cocoa powder, finely chopped nuts, or freeze-dried raspberries (for coating)
Instructions:
- Heat the cream – In a small saucepan over low heat, warm the heavy cream until hot but not boiling. Stir occasionally to prevent scorching.
- Melt the chocolate – Remove from heat and add the chopped dark chocolate. Let it sit for about a minute, then stir until smooth.
- Sweeten with honey – Stir in Champlain Valley Raw Honey, vanilla extract, and sea salt, blending well.
- Chill – Transfer the mixture to the refrigerator and let it firm up for 1–2 hours.
- Roll into truffles – Once the mixture has set, use a spoon to scoop small portions and roll them into bite-sized balls.
- Coat & finish – Roll each truffle in cocoa powder, chopped nuts, or freeze-dried raspberries for a gourmet touch.
- Store & serve – Keep them in an airtight container in the fridge until you’re ready to enjoy!
