Champlain Valley Honey Oat Bars
These delightful oat bars are packed with wholesome ingredients and sweetened with the delicate touch of Champlain Valley Apiaries raw honey. They're perfect for a quick breakfast on-the-go or a satisfying afternoon snack.
Ingredients:
- 1 1/2 cups rolled oats (quick or old-fashioned work)
- 1/2 cup whole wheat flour
- 1/4 cup chopped nuts (pecans, walnuts, or almonds)
- 1/4 cup rolled barley flakes (optional, adds a nice texture)
- 1/4 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1/3 cup Champlain Valley Apiaries raw honey
- 1/4 cup packed light brown sugar
- 1 large egg
- 1 teaspoon vanilla extract
Instructions:
- Preheat oven to 375°F (190°C). Line an 8x8 inch baking pan with parchment paper.
- In a large bowl, combine the oats, flour, nuts, barley flakes (if using), cinnamon, and salt.
- In a separate bowl, cream together the softened butter, raw honey, and brown sugar until light and fluffy. Beat in the egg and vanilla extract until well combined.
- Pour the wet ingredients into the dry ingredients and mix until just combined. Don't overmix!
- Press the mixture evenly into the prepared baking pan.
- Bake for 20-25 minutes, or until golden brown around the edges.
- Let cool completely in the pan before cutting into squares.
