These delightful oat bars are packed with wholesome ingredients and sweetened with the delicate touch of Champlain Valley Apiaries raw honey. They're perfect for a quick breakfast on-the-go or a satisfying afternoon snack.

Ingredients:

  • 1 1/2 cups rolled oats (quick or old-fashioned work)
  • 1/2 cup whole wheat flour
  • 1/4 cup chopped nuts (pecans, walnuts, or almonds)
  • 1/4 cup rolled barley flakes (optional, adds a nice texture)
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1/3 cup Champlain Valley Apiaries raw honey
  • 1/4 cup packed light brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract

Instructions:

  1. Preheat oven to 375°F (190°C). Line an 8x8 inch baking pan with parchment paper.
  2. In a large bowl, combine the oats, flour, nuts, barley flakes (if using), cinnamon, and salt.
  3. In a separate bowl, cream together the softened butter, raw honey, and brown sugar until light and fluffy. Beat in the egg and vanilla extract until well combined.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined. Don't overmix!
  5. Press the mixture evenly into the prepared baking pan.
  6. Bake for 20-25 minutes, or until golden brown around the edges.
  7. Let cool completely in the pan before cutting into squares.

  • Feel free to add other chopped dried fruits like cranberries, raisins, or chopped dates for extra flavor and texture.
  • For a fun twist, sprinkle a little sea salt over the top of the bars before baking.
  • These bars can be stored in an airtight container at room temperature for up to 3 days, or frozen for longer storage.
